No-Cook, Nut-Free Coconut Goji Bliss Balls

If there’s one homemade snack we almost always have on hand, it’s some form of bliss ball or energy ball. My kids love them, they’re usually loaded with nutrition and they’re dense and filling while being easily portable. They’re a win all around really.
The one thing I get asked for regularly, however, is for a bliss ball recipe that doesn’t include nuts or nut butters — so if that’s something you’ve been searching for, this recipe is for you! Not only is it nut-free, but it’s also gluten-free and naturally sweetened, too. And given their colours, these red and white bliss balls are perfect for upcoming Canada Day picnics, barbecues and celebrations.
What You'll Need
- 4 cups of unsweetened, shredded coconut
- 3 tablespoons of creamed honey
- 2 tablespoons of coconut oil
- 1/2 teaspoon of vanilla
- 3/4 cup of coconut flour
- 1/4 dried goji berries
Now I will say that if you’re used to date or nut butter-based bliss balls, coconut-based ones definitely have a different texture, but they’re equally delicious and may even feel a bit more dessert-ish in my opinion.
Alright, let’s get started, shall we? First up, we’re going to do something neat — we’re going to make our own coconut butter from scratch! Don’t worry, so long as you have a food processor, it’s super easy. Just place your shredded, unsweetened coconut into the bowl of the machine and turn it on.
We usually process our coconut butter for a total of 8 to 10 minutes and about half way through, you’ll have a crumbly, dough-like coconut mixture. Scrape the bottom and sides of the bowl down, and process some more.

Around the 8 to 10 minute mark, you’ll notice a smooth and creamy, butter-like mixture. This is coconut butter and it’ll be the base of our red and white bliss balls.
Add some coconut oil and creamed honey and vanilla, then process long enough to make sure everything is well incorporated.
Next up, add the coconut flour and the dried goji berries.
Pulse the food processor just enough times for the mixture to come together in a thick, white and red-speckled dough.
Next, take approximately one tablespoon of the mixture at a time in your hand, give it a good squeeze to bring it together in a mass, and then gently roll it into a ball shape. The mixture will feel quite soft at this point, but that's what’s going to make the bliss balls moist and super delicious.
This step is optional, but if you wish, roll your balls into some extra shredded coconut, some goji berries pulsed in the food processor or a combination of the two — go for it!
Aren’t they fun?! So perfect for a special Canada Day-themed snack, with absolutely zero artificial colouring!
Store these guys in an airtight container in the fridge and take them out as needed, keeping in mind that they’ll be much firmer when cold. They’re delicious both ways, but if you prefer a softer bliss ball, simply take them out 10 minutes or so before enjoying to allow them to come up to room temperature.
